
Ingredients for Kozhi Mulak (Chicken with Chillies) in Chettinad Style:
- Chicken boneless – 300 gm
- Oil – 50 milli
- Cinnamon, cloves, cardamom – 5 gm, together
Fennel seeds – 1 small spoon
Onions chopped fine – 150 gm
Curry leaves chopped – 1 big spoon - Ginger-garlic paste – 4 small spoons
- Tomato chopped fine – 250 gm
- Pepper powder – 3.5 big spoons
- Salt – For taste
- Curry leaves fried – To decorate
How to prepare Kozhi Mulak (Chicken with Chillies) in Chettinad Style?
- Clean chicken, cut into pieces, and keep aside.
- Heat oil and sauté ingredients no: 3.
- When onions turn golden brown, add ginger-garlic paste and sauté again.
- Add tomatoes and sauté again, followed by pepper and salt.
- Add chicken and cook it well.
- When it’s done, turn off the flame and decorate with fried curry leaves.
