Vadakkan Aviyal recipe

Ingredients for Vadakkan Aviyal (North Kerala Aviyal):

1. Elephant yam, cut into lengthy pieces – 1.5 cups

    White gourd, cut into lengthy pieces – 1 cup

    Snake gourd, cut into lengthy pieces – 1 cup

    Green banana, cut into long pieces – 1 cup

    Beans, cut into lengthy pieces – 4 or 5

    Long beans, cut into lengthy pieces – 4 or 5

2. Water – A little

    Turmeric powder – ¼ small spoon

    Chilli powder – ½ small spoon

    Green chillies – 4, cut lengthwise

    Curry leaves – A handful, smashed by hands

3. Drumstick cut lengthwise – 1 cup

    Bitter gourd – 2 or 3 pieces, lengthwise

4. Green mango sliced – ½ cup

5. Coconut grated – 2 cups

    Cumin seeds – ½ small spoon

    Curry leaves – As required

6. Salt – For taste

7. Curd – 1 cup

8. Coconut oil – 2 big spoons

How to prepare Vadakkan Aviyal (North Kerala Aviyal)?

1. Mix ingredients no: 1 and 2 and boil well.

2. Add drumstick and bitter gourd pieces to it, mix well, and sprinkle mango pieces.

3. Cook till it’s almost done.

4. Crush together ingredients no: 5, mix salt, and add to the vegetable pieces along with well-blended curd.

5. Mix the ingredients, add curry leaves and coconut oil, and turn off the flame.
