Dry Prawns with Mango - recipe

Ingredients for Dry Prawns with Mango (Unakka Chemmeen Maanga Koottu):

  1. Coconut oil – As required
  2. Shallots chopped fine – ¼ cup
    Curry leaves – 2 sprigs
  3. Dried prawns cleaned – ¾ cup
  4. Chilli powder – 1 small spoon
    Salt – For taste
  5. Green mango – 3 or 4, sliced thin
    Chilli powder – 1 small spoon
    Coconut oil and salt – As required

How to prepare Dry Prawns with Mango (Unakka Chemmeen Maanga Koottu)?

  1. Heat oil and fry shallots and curry leaves.
  2. Filter fried shallots and curry leaves from oil using a spatula, and add a small spoonful of oil.
  3. Deep fry prawns till they are crispy.
  4. Add chilli powder and salt and mix well.
  5. Add fried curry leaves and shallots, mix well, and turn off the flame.
  6.  Mix ingredients no: 5 in a serving plate.
  7. Add half the quantity of fried prawns to it and toss it well.
  8. Sprinkle the remaining fried prawns on top and serve.
