Ingredients for Prawns Omelette (Chemmeen Omelette):
- Oil – 1 big spoon
- Garlic crushed – 1 big spoon
- Celery chopped fine – 1 big spoon
Spring onion chopped fine – 2 big spoons - Cleaned prawns chopped into tiny pieces – 1 cup
- Grated cheese – 2 big spoons
- Eggs – 2
- Salt and pepper powder – As needed
How to prepare Prawns Omelette (Chemmeen Omelette)?
- Heat oil in a pan and sauté garlic.
- Add celery and spring onion and continue sauting.
- Squeeze prawns to completely remove the water content, and add them to the pan.
- Keep sautéing till the prawns change colour.
- Take the pan from the flame and add cheese.
- Separate the white yolk and the yellow yolk of eggs.
- Beat the white yolk in a bowl till foams are formed.
- Add yellow yolk and continue beating. Add salt and pepper too.
- Heat a little oil in a frying pan and pour beaten eggs.
- Spread the eggs in the pan to get a perfect circular shape.
- Spread the prawn mixture on its top.
- When the egg is well-cooked, roll it and take it from the pan.
- You can also decorate it with a few chopped celery leaves and spring onions as a topping just before you take the omelette from the pan.
- Serve hot.
