Fish roast in Aluva style

 

 

Ingredients for Fish Roast:

1. Fish – 200 gm
2. Kudam puli (Gambooj) – 4 pieces
3. Kashmiri chilli powder – 1.5 spoons
    Turmeric powder – ¼ tsp
    Salt – as needed
4. Curry leaves – a few
5. Green chillies – 5
6. Onion – 2
7. Tomato – 2
8. Turmeric powder – ½ tsp
    Chilli powder – 1 table spoon
9. Coconut – ½
10. Coconut oil – 1.5 big spoons
 

How to prepare Fish Roast?

  1. Cut fish into big pieces.
  2. Extract thick coconut milk from scrapped coconut.
  3. Wash Gambooj 2-3 times and boil it adding 2 cups of water.
  4. Add fish along with ingredients 3 and allow it to boil. Then let it cook in slow flame.
  5. Heat a pan and add oil. Sauté green chillies and curry leaves. When its colour changes, add chopped onion. A little time later, add chopped tomatoes and sauté it well.
  6. Add a pinch of salt along with ingredients 8 and sauté again.
  7. Exchange fish from the pot to serving plate and add the remaining water to sautéed onion. But don’t add gambooj pieces this time.
  8. When this water boils well, add coconut milk and cook for a while to make it thick. Add coconut oil and put flame off.
  9. Add this mixture on the top of fish pieces.
N.B: While preparing fish curry, if you use gambooj water instead of its pieces, then fish pieces won’t break quickly when cooked.
