Vegetable Biryani

Ingredients for Vegetable Biryani:

  1. Onion sliced thin – 2
  2. Tomato chopped – 2
  3. Boiled vegetables – 2 cup
  4. (Carrot, cauli flower, French beans, potato and green peas)
  5. Cream – 4 big spoons
  6. Curd – 6 big spoons
  7. Sugar – 1 – 1.5 tsp
  8. Lemon juice – half lemon
  9. Ghee – 12 big spoon (can substitute half amount by vegetable/refined oil)
  10. Coriander leaves – As needed

To grind:

  1. Kashmir chilli – 4
  2. Green chillies – 2
  3. Garlic – 4
  4. Ginger – ½ inch piece
  5. Cashew nut – 2 big spoons
  6. Coriander – 1 small spoon
  7. Cumin seeds – ¼ tsp
  8. Cinnamon – 2 inch piece
  9. Cardamom – 4
  10. Cloves – 3
  11. Pepper grinded – 4

For rice:

  1. Basmati rice – 2 cup
  2. Saffron – ¼ tsp
  3. Milk – ¼ cup
  4. Onion sliced thin – 2
  5. Cardamom – 4
  6. Ghee and refined oil – 4 big spoons combined

Method of preparation of Vegetable Biryani:

  1. Pre-heat oven 350 degree Celsius
  2. Fry rice in ghee for a little time.
  3. Add double quantity water and salt and cook. Rice should not stick together.
  4. Sauté onion in a pan along with ghee and cardamom. Add to rice.
  5. Add saffron to milk and sprinkle on half of the cooked rice to get colour and aroma.
  6. In the remaining rice, add 4 spoon curd and mix well.

To prepare curry:

  1. Sauté onion in 6 big spoon ghee till it becomes dark brown.
  2. Add gravy to it and sauté again for 5-6 minutes.
  3. Add chopped tomato, vegetables, sugar, cream and 2 big spoons curd and cook for 10 minutes.
  4. Add lemon juice and coriander leaves.

Final touch:

  1. In the baking dish, spread saffron added rice and vegetable curry as layers one above other. Make a few layers and on top spread curd added rice.
  2. Bake in preheated oven for 15-20 minutes in 350 degree celsius.
  3. Decorate with ghee fried raisins, cashew nuts and onions.
