Vazhuthananga Mezhukku Puratti (Egg Plant Dry Fry)

Ingredients for Vazhuthananga Mezhukku Puratti (Egg Plant Dry Fry):

1. Brinjal (Green Vazhuthananga/Violet Kathirikka) – 1/4kg

2. Onion – 1

3. Green chillies – 4

4. Salt – As per taste

5. Oil – 2 big spoons

6. Pepper crushed – ½ small spoon

How to prepare Vazhuthananga Mezhukku Puratti (Egg Plant Dry Fry)?

1. Cut brinjal into thin, 1-inch length pieces and put them in water for a while.

2. Heat oil and sauté onions and green chillies.

3. Add salt and brinjal and close the lid.

4. Cook till it’s well cooked.

5. Sprinkle pepper and put off the flame.
