
Ingredients for Egg – Potato Curry:
- Boiled eggs – 5
- Potato cut into square pieces – 1
- Big onion – 1
- Green chillies split into two – 5
- Ginger-garlic paste – 1.5 tsp
- Coriander powder – 2 tsp
- Turmeric powder – ¼ tsp
- Fennel seeds powder – ½ tsp
- Garam masala – A pinch
- Coconut milk (1st extract) – 2 cups
- Cashew paste – A little
- Coconut oil, curry leaves and salt – As required
How to prepare Egg – Potato Curry?
- Boil eggs and also cook potatoes, and keep them aside.
- Heat oil in a pan and sauté onions and salt.
- When it turns light red, add green chillies and ginger-garlic paste.
- Fry for the next 2-3 minutes.
- Add masala powder and ½ spoon of oil and fry for the next three minutes.
- Add cooked potatoes and mix well.
- Add coconut milk and boil well.
- Reduce the flame and add eggs.
- Boil the potato curry till the gravy turns thick.
- Decorate with coriander leaves and serve.
