Egg - Potato Curry recipe

Ingredients for Egg – Potato Curry:

  1. Boiled eggs – 5
  2. Potato cut into square pieces – 1
  3. Big onion – 1
  4. Green chillies split into two – 5
  5. Ginger-garlic paste – 1.5 tsp
  6. Coriander powder – 2 tsp
  7. Turmeric powder – ¼ tsp
  8. Fennel seeds powder – ½ tsp
  9. Garam masala – A pinch
  10.  Coconut milk (1st extract) – 2 cups
  11. Cashew paste – A little
  12. Coconut oil, curry leaves and salt – As required

How to prepare Egg – Potato Curry?

  1. Boil eggs and also cook potatoes, and keep them aside.
  2. Heat oil in a pan and sauté onions and salt.
  3. When it turns light red, add green chillies and ginger-garlic paste.
  4. Fry for the next 2-3 minutes.
  5. Add masala powder and ½ spoon of oil and fry for the next three minutes.
  6. Add cooked potatoes and mix well.
  7. Add coconut milk and boil well.
  8. Reduce the flame and add eggs.
  9. Boil the potato curry till the gravy turns thick.
  10. Decorate with coriander leaves and serve.
