Tharavu Roast recipe

Ingredients for Duck Roast (Tharavu Roast):

  1. Cleaned duck without cutting into pieces – 1
  2. Garlic – 1 cluster
    Green chillies – 4
    Pepper powder – 1 big spoon
    Turmeric powder – ½ small spoon
    Lemon juice – From 1 lemon
    Salt – For taste
  3. Coconut oil – ½ cup

How to prepare Duck Roast (Tharavu Roast)?

  1. Make a fine paste of ingredients no: 2.
  2. Marinate the duck using this paste, and keep it in the refrigerator for 4 hours.
  3. Heat oil in a big pan and fry the duck.
  4. Flip both sides to cook it for a while.
  5. Add sufficient water, close the lid and cook the duck.
  6. Gravy should turn thick.
  7. Cut the duck into pieces and serve.

Ingredients for Thaaraav Roast (Duck Roast) Recipe 2:

  1. Duck – 1kg, cleaned and cut into large pieces
  2. Coriander powder – 4tsp
    Chilli powder – 2tsp
    Turmeric powder – 1/2tsp
    Pepper – 1tsp
    Fennel – 1tsp
    Cinnamon – 2.5inch piece
    Garlic – 8 cloves
    Ginger – 1inch piece
    Salt – As required
    Vinegar – 2tsp
  3. Hot water – 2cups
  4. Oil – 1/4cup
    Ghee – 4tsp
    Potato (boiled) – 3, cut into pieces
  5. Onion – 1/2cup, sliced and squeezed juice
  6. Thick coconut milk – 1cup

How to prepare Thaaraav Roast (Duck Roast) Recipe 2?

  1. Mix the second set of ingredients into a fine paste.
  2. Apply this paste on the duck pieces, let it rest for a while, then add 2 cups of hot water.
  3. Cook on a closed flame until the duck is well-cooked.
  4. Once cooked, remove the duck pieces from the gravy and keep them aside.
  5. Heat oil and ghee together, fry the boiled potatoes and set aside.
  6. In the same oil, fry the sliced onions and set aside. Then fry the cooked duck pieces in the same oil.
  7. Remove excess oil and pour the cooked gravy back into the pan. Stir well, add the fried onions and bring it to a boil.
  8. Add the fried duck pieces back into the gravy, mix well, and cook until the gravy thickens.
  9. Finally, add the thick coconut milk, mix well, and remove from the heat.
  10. Spread the fried potatoes on top and serve hot.
