Sukhiyan

Ingredients for Sukhiyan:

1. Green gram – 1 cup

2. Jaggery – 300 gm

3. Coconut scrapped – 1 cup

4. Cardamom powder – ¼ small spoon

    Ghee – 1 small spoon

5. Maida – ½ cup

    Rice flour – ¼ cup

    Water – As needed

    Salt – A pinch

6. Coconut oil – For frying

How to prepare Sukhiyan?

1. Cook green gram adding sufficient water. But don’t overcook it.

2. Melt jaggery and then add scrapped coconut and fry for a while.

3. When water content is fully absorbed, add cardamom powder and ghee.

4. Add cooked green peas, mix gently and put off the flame.

5. Prepare thin batter using ingredients no: 5, with consistency of dosa.

6. Make small balls from green gram mixture.

7. Dip each ball in maida-rice batter and deep fry in hot oil.

Sukhiyan (Recipe 2)

Ingredients for Sukhiyan (Recipe 2):

1. Green gram – 1 cup

2. Jaggery – 150 gm, powdered

3. Cardamom and cumin powdered – 1 small spoon

    Salt – A little

4. Maida – ½ cup

    Rice flour – 1 big spoon

    Salt and water – As needed

    Baking soda – A pinch

5. Oil – For frying

How to prepare Sukhiyan (Recipe 2)?

1. Cook green gram adding sufficient water.

2. Continue cooking till water content is fully absorbed and add powdered jaggery.

3. Mix the contents well and add ingredients no: 3.

4. Mix it well and put off the flame. This is the filling.

5. Allow it to cool a little bit and make small balls from it.

6. Prepare batter using ingredients no: 4. Batter should not be tight.

7. Heat oil in a thick bottomed pan.

8. Dip each ball in the batter, till it gets a fine coat.

9. Deep fry each ball in hot oil till it’s done.
