Achappam (Achumurukk)

Ingredients for Achappam (Achumurukk):

1. Raw rice – 2 cups

2. Coconut – 1

3. Eggs – 3

4. Soda powder – A pinch

    Sugar – As required

    Salt – As required

    Sesame seeds – 1 small spoon

5. Coconut oil – For frying

How to prepare Achappam (Achumurukk)?

1. Soak rice in water for a few hours.

2. Extract coconut milk from coconut.

3. Grind rice adding coconut milk into a smooth paste.

4. Beat three eggs and add to ground rice to prepare the batter of thick consistency.

5. Heat oil in a thick bottomed pan.

6. Take achappam mould and dip 3/4th of it in the batter. (If you dip it full, achappam won’t separate from mould once it is fried).

7. You can also use two moulds to prepare achappam fast. While you are frying one achappam in hot oil, you can dip the second one in batter.

Tip: Immerse the mould for 24 hours in water, one day prior to making achappam. If so while frying achappam easily separates from the mould.
