
Ingredients for Special Chicken Curry:
- Oil – ½ cup
- Onion – 2, medium-sized, chopped thin
- Garlic – 8 cloves, crushed
Ginger – 1-inch piece, crushed - Chicken – 1 kg, cut into pieces
Salt – ¼ tsp - Coriander – 1 small spoon, crushed
Cumin seeds – 1 small spoon
Pepper – 6 seeds
Cloves – 4 - Coriander powder – 1 small spoon
Chilli powder – 1 small spoon
Red chillies crushed – ½ small spoon
Turmeric powder – 1/2 small spoon
Pepper powder – 1/4 small spoon - Green chillies – 3, chopped thin
- Tomato – 2 small-sized, made into a paste
- Coriander leaves chopped – As required
How to prepare Special Chicken Curry?
- Heat oil and sauté onion for approximately 12-15 minutes.
- When it turns golden brown, add 2 big spoons of water.
- Stir it well along the edges/sides and boil it.
- When water is fully absorbed, sauté garlic and ginger.
- When the raw smell goes out, add 2 big spoons of water, and stir again.
- Add cleaned chicken along with ¼ tsp salt and cook for 5 minutes.
- Mix ingredients no: 5 and 6, and add to the chicken.
- Add sufficient salt and green chillies, and sauté for 2-3 minutes.
- Stir it well, till the contents in the edges are also added to the chicken.
- Add tomato paste and sauté for 2-3 minutes till a thin layer of oil appears on the edges.
- Add 1 ¾ – 2 glasses of water and mix the contents well.
- Close the lid and boil the contents.
- Reduce the flame and cook for 25 minutes. Stir occasionally.
- When the chicken is well-cooked, check the salt and other ingredients.
- Keep the lid open for 4-5 minutes.
- When a thin layer of oil appears on the surface, turn off the flame.
- Decorate with coriander leaves.
- Serve hot with rice, naan or roti.
