Semiya Brinji recipe

 

Ingredients for Semiya Brinji:

  1. Semiya (vermicelli)  – 500 gm
  2. Dalda – 25 ml
  3. Refined oil – 25 gm
  4. Mustard – 10 gm
  5. Ginger sliced into thin, lengthy pieces – 25 gm
  6. Green chillies with end split – 25 gm
  7. Curry leaves – 3 stems
  8. Onion sliced – 100 gm
  9. Carrot sliced – 50 gm
  10. Capsicum sliced – 50 gm
  11. Cabbage sliced – 100 gm
  12. Coconut grated – 1
  13. Ghee – 25 milli
  14. Salt – as needed
  15. Sugar – 25 gm

How to prepare Semiya Brinji?

  1. Add vermicelli to water and half-cook it.
  2. Heat oil and dalda together in a pan, and splutter mustard seeds.
  3. Sauté ginger, green chillies, onion, and curry leaves together.
  4. Add vegetables and sauté again.
  5. Add half of the grated coconut and sugar. Stir well.
  6. Add vermicelli and salt. Stir well.
  7. Add ghee on top along with the remaining coconut.
