Duck Roast Tharavu Roast

Ingredients for Duck Roast (Tharavu Roast) Recipe 2:

  1. Duck with thick flesh – 1 kg
  2. Pepper (green) – 1 big spoon
    Coriander powder – 2 big spoons
    Garam masala powder – 1 small spoon
    Fennel seeds – 1 small spoon
    Turmeric powder – 1 small spoon
    Garlic – 10 cloves
    Ginger – 1.5 inch piece
    Green chillies – 4
  3. Vinegar – 1 big spoon
  4. Salt – For taste
  5. Coconut oil – ¼ cu
    Ghee – 1 small spoon
  6. Onions – 3, medium-sized, chopped
    Shallots – 10, chopped
  7. Coconut milk 1st extract- ½ cup

How to prepare Duck Roast (Tharavu Roast) Recipe 2?

  1. Clean the duck and cut it into pieces.
  2. Make a fine paste of ingredients no: 2, adding vinegar.
  3. Add salt and marinate duck pieces using this paste.
  4. Allow to rest for at least 1 hour.
  5. Heat oil and ghee in a pan and fry the duck pieces.
  6. In the remaining oil, sauté onions and shallots.  
  7. Drain it off from the oil, and in the remaining oil, sauté the leftover gravy used for marinating duck pieces.
  8. Add water to it, enough to cook the duck pieces.
  9.  Add fried onions, shallots and duck to the boiling water and cook well.
  10. Cook the curry till the water content is fully absorbed.
  11. When the water reduces completely, add coconut milk and mix well.
  12. Heat the curry well and take it off the flame.
