Urulakizhangu – Mutta Varattiyath recipe

Ingredients for Potato – Egg Fry (Urulakizhangu – Mutta Varattiyath):

  1. Eggs – 4
    Potato, small-sized – 4
  2. Coconut oil – As needed
  3. Salt – For taste
  4. Cumin seeds – ¼ small spoon
  5. Onions – 2
    Ginger-garlic paste – 1 small spoon
  6. Green chillies – 5, chopped
  7. Chilli powder – ½ small spoon
    Coriander powder – 1 small spoon
    Turmeric powder – ½ small spoon
    Garam masala powder – 1 small spoon
  8. Asafoetida powder – A little
    Salt – For taste
  9. Tomato – 2, chopped
  10. Coriander leaves chopped – 2 big spoons

How to prepare Potato – Egg Fry (Urulakizhangu – Mutta Varattiyath)?

  1. Boil potatoes and eggs (separately).
  2. Never break potatoes if it’s small sized. Otherwise, cut into two halves.
  3. Heat oil in a pan and sputter cumin seeds.
  4. Add onions and ginger-garlic paste, and sauté the ingredients.
  5. When it’s almost done, add green chillies, chopped.
  6. Add the powders and stir the contents well.
  7. Finally, add ingredients no: 8.
  8. Add chopped tomatoes and continue cooking till they turn tender.
  9. Add potatoes and a little water, and cook for a few minutes.
  10. Finally, add boiled eggs and continue cooking till the gravy thickens.
  11. When a thin layer of oil appears on the surface, add coriander leaves and turn off the flame.
