
Ingredients for Potato – Egg Fry (Urulakizhangu – Mutta Varattiyath):
- Eggs – 4
Potato, small-sized – 4 - Coconut oil – As needed
- Salt – For taste
- Cumin seeds – ¼ small spoon
- Onions – 2
Ginger-garlic paste – 1 small spoon - Green chillies – 5, chopped
- Chilli powder – ½ small spoon
Coriander powder – 1 small spoon
Turmeric powder – ½ small spoon
Garam masala powder – 1 small spoon - Asafoetida powder – A little
Salt – For taste - Tomato – 2, chopped
- Coriander leaves chopped – 2 big spoons
How to prepare Potato – Egg Fry (Urulakizhangu – Mutta Varattiyath)?
- Boil potatoes and eggs (separately).
- Never break potatoes if it’s small sized. Otherwise, cut into two halves.
- Heat oil in a pan and sputter cumin seeds.
- Add onions and ginger-garlic paste, and sauté the ingredients.
- When it’s almost done, add green chillies, chopped.
- Add the powders and stir the contents well.
- Finally, add ingredients no: 8.
- Add chopped tomatoes and continue cooking till they turn tender.
- Add potatoes and a little water, and cook for a few minutes.
- Finally, add boiled eggs and continue cooking till the gravy thickens.
- When a thin layer of oil appears on the surface, add coriander leaves and turn off the flame.
