Baji Mulak Khadi (Baji Chilli Khadi)

Ingredients for Baji Mulak Khadi:

1. Baji chilli small – 100 gm

2. Mango pickle – 2 big spoons

    Onions chopped fine – 1

    Garlic chopped fine – 1 small spoon

    Salt – For taste

3. Curd – 250 gm

    Water – 1 cup

    Gram flour – 2 big spoons

    Salt – For taste

    Turmeric powder – ½ small spoon

    Asafoetida powder – A pinch

    Sugar – 2 small spoons

4. Oil – 3 big spoons

5. Cumin seeds – ½ small spoon

    Coriander seeds – 1 big spoon

6. Ginger – 1 small spoon

    Onions chopped fine – 1

7. Red chillies – 4

    Coriander leaves chopped – To decorate

How to prepare Baji Mulak Khadi?

1. Split Baji chillies into two halves.

2. Mix together ingredients no: 2 and use it as filling for split chillies.

3. Mix together ingredients no: 3 without any lumps.

4. Heat half quantity of oil in a frying pan and fry cumin seeds and coriander seeds.

5. Add chopped ginger and onions and sauté the contents.

6. Add beaten curd mixture to it and cook for next 30 minutes in low flame. Stir frequently.

7. When it thickens, strain it once and put back to flame.

8. Heat remaining oil in another pan and slowly fry red chillies and baji chillies.

9. Add fried chillies to prepared Khadi.

10. Keep in low flame for 5 more minutes and put off the flame.

11. Sprinkle chopped coriander leaves on its top before you serve.
