
Ingredients for Nadan Tharavu Curry (Countryside Duck Curry in Kerala Style):
- Duck – 2 kg
- Coconut oil – As needed
- Mustard – ½ small spoon
- Cloves – 3
Cardamom – 5, crushed
Fennel seeds – 1 big spoon, crushed - Ginger – 1 big piece, crushed
Garlic – 25 cloves – crushed
Curry leaves – As required - Onions – 4, chopped
Green chillies – 5, chopped - Turmeric powder – 2 small spoons
Coriander powder – 5 small spoons
Pepper powder – 2 small spoons
Chilli powder – 2.5 big spoons - Tomato – 3, chopped
- Coconut – 2
- Salt – As per taste
Vinegar – As required - Shallots – 3, chopped
Curry leaves – 2 sprigs
Red chillies – 2 or 3
How to prepare Nadan Tharavu Curry (Countryside Duck Curry in Kerala Style)?
- Clean the duck, and without removing skin, cut it into small pieces.
- Add a little salt, vinegar and turmeric powder to the water and dip the duck pieces.
- Wash it well and strain off water.
- Take a pressure cooker, and put duck pieces in it.
- Add one small spoon of vinegar, a little turmeric powder, a little chopped ginger & garlic, salt and a big spoon of oil.
- Manually mix the contents well and cook in a low flame for 4 or 5 whistles.
- Heat coconut oil in a pan and sputter mustard seeds.
- Sauté ingredients no: 4 and add ingredients no: 5.
- Mix it well till a pleasant smell comes out.
- Add onion and green chillies and sauté well.
- When it is done, reduce the flame and add ingredients no: 7.
- Mix it well and add tomatoes.
- Close the lid and cook for 5 minutes.
- Add cooked duck along with water and mix it well.
- Close the lid, reduce the flame and cook for a few minutes.
- Extract the first and second milk from the coconut.
- Add the second milk to the duck and cook it with the lid closed.
- Add vinegar and salt, mix well and then first extract of coconut milk.
- Stir well and take off the flame before the milk starts curdling.
- Fry ingredients no: 11 in hot oil and decorate your traditional duck curry.
