Curried Lentil Soup

Ingredients for Curried Lentil Soup:

1. Oil – 2 big spoons

2. Onions – 1 big, chopped fine

    Carrot – 1 big, chopped fine

    Celery – 1 stem, chopped fine

3. Garlic – 3 cloves, chopped fine

4. Curry powder – 2 big spoons

5. Vegetable stock – 6 cups

    Green gram and pigeon pea – 1.5 cups, together

    Salt and pepper powder – As needed

6. Coconut milk – 1.5 cups

7. Coriander leaves – To decorate

How to prepare Curried Lentil Soup?

1. Heat oil in a big pan.

2. Add ingredients no: 2 and sauté for 8 minutes in medium flame.

3. Add garlic and sauté for 2 minutes.

4. Add curry powder and sauté for 2 minutes.

5. Add ingredients no: 5, bring to boil and reduce the flame.

6. Cook it for 40 minutes. You can also use pressure cooker.

7. Allow your curry soup to cool a little bit.

8. Divide the soup into two equal parts.

9. Blend one part in a mixer. You can do it in 2 or 3 trips.

10. Transfer whole soup to the pan again and add coconut milk.

11. Cook your soup in medium flame.

12. Keep stirring. But never bring it to boil.

13. Add salt and pepper.

14. Transfer your Curried Lentil Soup to serving bowls and garnish with coriander leaves.

15. Serve hot.
