Chicken with Beetroot Mash recipe

Ingredients for Chicken with Beetroot Mash:

  1. Beetroot – 200 gm
  2. Potato boiled and smashed – 50 gm
    Butter – 20 gm
    Salt and pepper – As required
  3. Olive oil – As required
    Fresh thyme – As required
    Garlic – 2 cloves
    Mustard paste – 1 small paste
    Salt and pepper – As required
  4. Chicken breast – 2
  5.  Olive oil – As needed

How to prepare Chicken with Beetroot Mash?

  1. Cook beetroot, adding sufficient water.
  2. Divide the beetroot into two halves, and add ingredients no: 2 to one part.
  3. Mix it well. This mixture is called beetroot mash.
  4. Make a fine paste of ingredients no: 3 along with the remaining cooked beetroot. This is called puree.
  5. Marinate chicken breast using this puree and refrigerate for one hour.
  6. Take it out after one hour and use a heart-shaped cutter to cut the chicken breast.
  7. Heat olive oil in a pan and fry the chicken breast.
  8. Flip both sides and fry each side for 10 minutes.
  9. Make a ball from beetroot mash, and shape it to resemble a heart.
  10. Using the heart-shaped cutter, cut a heart shape from beetroot mash.
  11. Brush the serving plate using the beetroot puree.
  12. Arrange both the chicken breast and beetroot mash on the plate and serve.
