Ingredients for Avial for Kozhikode Sadya:
1. Vegetables cleaned and cut into 1-inch pieces:
Elephant yam – 1 cup
Banana – ½ cup
Long beans green – ¼ cup
Snake gourd – ¼ cup
Carrot – ¼ cup
Drum stick – ¼ cup
Cucumber – ¼ cup
Bitter gourd – 1 big spoon
2. Coconut oil – 1 big spoon
Turmeric powder – 2 small spoons
Chilli powder – 1 small spoon
Salt – As required
3. Curd – 1 cup
Jaggery – 1 piece (1 Achu)
4. Coconut grated – 1 cup
Green chillies – 5
Curry leaves – 2 stalks
5. Coconut oil – ½ cup
How to prepare Avial for Kozhikode Sadya?
1. Take all the vegetables listed as 1 in an urli, add sufficient water and mix ingredients no: 2 to it.
2. Add curd and jaggery to it, mix well and cook on a low flame with the lid closed.
3. When vegetables are well-cooked, remove the lid and allow the water content to be fully absorbed.
4. Crush together the coconut and green chillies and add to the cooked vegetables.
5. Also, add curry leaves and mix the ingredients well.
6. When steam starts coming out, add coconut oil and turn the flame off.
7. Mix the contents after some time and serve.
