
Ingredients for Whole Chicken Masala Roast:
- Medium-sized chicken – 1 (As a whole)
- Onions chopped fine – 2 cups
Red chillies – 12, cut into 2 pieces each, after removing seeds
Garlic chopped – 1 big spoon
Ginger chopped – ½ big spoon
Turmeric powder – ½ small spoon
Curd – ¼ cup
Coriander, fried and powdered – ½ big spoon
Cumin seeds, fried and powdered – A pinch
Cloves – 6
Cardamom – 4
Cinnamon – 1-inch piece
Nutmeg, powdered – A pinch - Salt and water – As needed
- Ghee and butter – 1 big spoon each
- Onions chopped fine – 1 cup
- Ghee – ½ big spoon
- Potato boiled and smashed – 1 cup
- Green peas, carrot, beans – To decorate
How to prepare Whole Chicken Masala Roast?
- Clean the chicken, remove liver and keep aside.
- Slice the liver into thin pieces, and keep them separate.
- Mix ingredients no: 2 together and marinate the chicken using it.
- Allow it to rest for 3 hours.
- Add salt and sufficient water, and cook the chicken.
- Continue cooking till the chicken is well-cooked and coated with gravy.
- Heat oil and ghee in a pan, fry onions and keep aside.
- In the remaining oil, fry the chicken on a low flame and keep aside.
- In the remaining oil, add the leftover gravy (after cooking the chicken) and boil it.
- Turn the flame off and add fried onions.
- Heat the ghee and add the chicken liver.
- Sauté it and cook in a low flame.
- 1When it’s done, add smashed potato and mix well.
- Take two big spoons of prepared gravy and add to the cooked liver-potato mixture.
- Transfer the contents to a small mould (when it’s hot) and press well.
- Cut the chicken into big pieces and place it on a serving plate.
- Pour gravy on its top and in the centre portion, flip the potato-liver mixture upside down.
- Put green peas, carrots, and beans in boiled water, and then sauté in oil.
- Decorate your whole chicken with these vegetables and serve.
