Vazhuthananga Thoran recipe

Ingredients for Vazhuthananga Thoran (Brinjal Thoran):

1. Brinjal – 1/4 kg

2. Coconut grated – 1 cup

    Green chillies – 2

    Garlic – 2 cloves

    Cumin – ½ small spoon

    Turmeric powder – ¼ small spoon

3. Oil – 2 big spoons

4. Mustard – ½ small spoon

    Curry leaves – 1 stem

    Red chilli – 1

How to prepare Vazhuthananga Thoran (Brinjal Thoran)?

1. Chop eggplant into tiny pieces.

2. Wash it well and strain to remove excess water.

3. Blend ingredients no: 2 in a mixer.

4. Heat oil and sputter mustard seeds.

5. Add chilli and curry leaves, followed by the coconut mixture.

6. Sauté it, and then add chopped brinjal.

7. Cook till the brinjal is well-cooked and the water content is fully absorbed.
