Parotta + Mutton Varattiyath Recipe

Ingredients for Parotta :
1. Wheat powder – 3 cups
Salt – For taste
Sugar – 1 big spoon
Milk – 100 milli
2. Oil – As needed
How to prepare Parotta?
1. Mix together ingredients no: 1.
2. If needed, add extra water and knead the dough similar to chapati.
3. Allow it to rest for two hours.
4. Make small balls from the dough.
5. Spread a little oil on top and allow them to rest for a little more time.
6. Spread each ball very thin, and spread oil on both sides.
7. From one side, fold in a zigzag manner to form layers.
8. Then make round shapes out of them (Similar to Kerala Parotta).
9. Now spread each one like a chappatti.
10. Heat the tawa and spread a little oil.
11. Now cook each parotta. Flip both sides to cook well.
12. Take 4 or 5 parotas together and beat from either side to form layers.
13. Serve hot.
Ingredients for Mutton Varattiyath:
1. Mutton pieces – 200 gm
2. Coconut oil – 100 milli
3. Onions – 100 gm, chopped fine
Ginger – ½ inch piece, chopped fine
Garlic chopped fine – 1 teaspoon
Green chillies – 5, end split
Shallots – 15, chopped fine
Curry leaves – 1 stalk
4. Tomato – 2, chopped fine
5. Coriander powder – 2 small spoons
Chilli powder – 1 small spoon
Kashmiri powder – 1/2 small spoon
Turmeric powder – 1/2 small spoon
Garam masala powder – 1/2 small spoon
Pepper crushed – 1/2 small spoon
6. Salt – For taste
7. Coconut milk – 1 cup
8. Mustard – 1/2 small spoon
Red chillies – 3
Curry leaves – 3 stalks
Cashews broken – 2 small spoons
How to prepare Mutton Varattiyath?
1. Cut mutton into small pieces.
2. Heat oil in a pan and sauté ingredients no: 3.
3. When it turns light brown, add tomatoes.
4. Mix well and add ingredients no: 5.
5. Sauté till the masala flavour changes and a thin layer of oil appears on the surface.
6. Add mutton pieces and salt and cook in a low flame.
7. When the mutton is well-cooked, add coconut milk and take it off the flame.
8. Sauté ingredients no: 8 in a little oil and pour over your mutton.
