Sev

 

Ingredients for Sev:

1. Besan (gram flour) – ½ kg

    Chilli powder – 1 small spoon

    Asafoetida powder – 1 small spoon

    Yellow food colour – A pinch

    Salt, water – As required

2. Oil – For frying

How to prepare Sev?

1. Mix together ingredients no: 1 to prepare the batter for sev.

2. The batter should be thick consistency, similar to idiyappam’s.

3. Transfer the batter to idiyappam maker.

4. Heat oil in a pan and press the batter in hot oil to prepare the sev.

5. Slightly rotate it, so that the batter falls uniformly on the surface of oil.

6. Continue the process for remaining batter too.

7. Drain off excess oil.

Sev (Recipe 2)

Ingredients for Sev (Recipe 2):

1. Besan (gram flour) – 250 gm

    Chilli powder – 1 small spoon

    Asafoetida powder – 1/4 small spoon

    Turmeric powder – A big pinch

    Salt

2. Water – As required

3. Oil – For frying

How to prepare Sev (Recipe 2)?

1. Mix together ingredients no: 1 in a big bowl to prepare the batter for sev.

2. Add water slowly and prepare the batter. The batter should have thick consistency of idiyappam.

3. Transfer the batter to idiyappam maker.

4. Heat oil in a pan and press the batter in hot oil to prepare the sev.

5. Slightly rotate it, so that the batter falls uniformly on the surface of oil.

6. Continue the process for remaining batter too.

7. Deep fry till golden brown. Never over fry it.

8. Drain off excess oil and allow the sev to cool completely.

9. Store in air-tight containers.

Author’s Note: Sev we get from a bakery of our hometown has a distinct taste. I tried many times to prepare Sev with same taste & aroma, but failed every time. One day I stumbled upon on a recipe I found online and gave a try. I got the exact taste which I want. The recipe had one more ingredient. It’s ajwain. Soak ajwain in hot water for a few hours so that its taste and aroma fully dissolve in water, and later use this water to prepare the batter. Give a try and post comment below please.
