
Ingredients for Rich Duck Roast with Kashmiri Chillies:
- Duck – 1
- Coconut oil – 6.5 small spoons
- Kashmiri chilli – 15, broken into pieces
Coriander seeds – A handful - Fennel seeds – 2 pinch
Cinnamon – 2.5-inch piece
Cardamom – 4
Cloves – 3
Mace – 2 - Meat masala powder – 1 small spoon
Pepper powder – ½ small spoon
Turmeric powder – 1/4 small spoon - Mustard – ½ small spoon
- Shallots – 300 gm, chopped
Curry leaves – 2 sprigs
Ginger – 1 small piece, chopped
Garlic – 1 full, chopped - Tomato – 1, chopped fine
Salt – For taste - Cashews – To garnish
How to prepare Rich Duck Roast with Kashmiri Chillies?
- Clean the duck and cut it into 8-10 pieces.
- Heat ½ a small spoon of oil in a pan and fry chillies till they turn colour.
- Add coriander seeds and sauté again.
- When the colour changes, turn off the flame.
- Add ingredients no: 4 and mix well.
- When the contents cool, make a powder using a mixer.
- Add ingredients no: 5 to it, along with a little water and blend the contents again to get a fine paste.
- Heat oil in a pan and sputter mustard seeds.
- Add ingredients no: 7 and sauté well.
- Add tomato and salt, and continue sauting till it turns golden brown.
- Add duck pieces to it and sauté for 5 more minutes.
- Transfer the contents to a pressure cooker and cook them.
- When the pressure drops to zero, open the lid of the cooker and take the thin layer of oil forming on the surface of the duck gravy.
- Transfer that oil to a pan and fry duck pieces one after another.
- In the remaining oil, add the duck gravy.
- When the gravy thickens and turns brown, add the fried duck pieces.
- Continue cooking till the duck pieces get a good coat of gravy.
- You can make it rich by sprinkling a few cashews on top.
