A quesadilla is fundamentally a filled/stuffed tortilla, which forms an integral part of Mexican cuisine. This main-course dish originated in central and northern Mexico, and the name comes from the Spanish word queso (cheese). While the traditional Mexican version often uses corn tortillas and stringy Oaxaca cheese, the version most people know globally typically uses flour tortillas.
This International Flatbread has been globally accepted and has its own regional derivations. Here is an easy adapted Indian version prepared using traditional wheat flour for the bread and mushrooms, grated paneer and capsicum used for stuffing.

Ingredients for Quesadilla:
1. Wheat flour – 1 cup
Corn flour – 1 cup
Salt – Half a small spoon
Oil – 1 big spoon
2. Water – As required
For Salsa:
3. Oil – 1 big spoon
4. Onion – 1, chopped fine
Tomato – 2, chopped fine
5. Chilli powder – Half a small spoon
Salt – For taste
6. Coriander leaves chopped – 2 big spoons
For filling:
7. Mushroom chopped – 50 grams
Capsicum chopped – 50 grams
Spring onion chopped – 20 grams
Grated paneer – 30 grams
Cheese – 50 grams
8. Oil – For frying
How to prepare Quesadilla?
1. Knead ingredients no: 1 in a bowl and prepare the dough. Allow it to rest for 5 minutes.
2. Divide the dough into 8 equal parts and spread them into chapatis.
3. Cook them in a non-stick tawa until brown spots appear on both sides.
4. To prepare salsa, first heat the oil and saute the chopped onion and tomato for a minute.
5. Add chilli powder and salt, and saute again.
6. Add coriander leaves and take it from the flame.
7. Divide ingredients 7 into 4 parts. This is the filling
8. Grease a pan and place a chapati.
9. Spread a little salsa on its top.
10. Place 1/4th of the vegetable-paneer filling on its top.
11. Make a little Maida paste by adding water, and apply it to the edges of Chapati.
12. Place another chapati on top and seal it properly.
13. Shallow fry in a little oil.
14. Cut them into triangular shapes using a pizza cutter and serve hot.
15. You can also substitute paneer with chicken, or anything of your choice.
