Pumpkin Coconut Milk Curry recipe

Ingredients for Pumpkin Coconut Milk Curry (Mathanga Paalu Curry):

1. Pumpkin – 1 kg

2. Green chillies – 6, split into two

    Turmeric powder – ½ small spoon

    Cumin seeds fried and powdered – 1 small spoon

    Garlic – 4 big cloves, crushed

    Salt – For taste

    Water – 2.5 cups

3. Thick coconut milk – ½ cup

4. Oil – ½ big spoon

5. Mustard – ½ small spoon

    Red chillies – 2

    Curry leaves – 2 stems

How to prepare Pumpkin Coconut Milk Curry (Mathanga Paalu Curry)?

1. Remove the skin and seeds of the pumpkin and cut into small square pieces.

2. Cook pumpkin, adding ingredients no: 2.

3. When pumpkin pieces are cooked well, and water is reduced to half, smash the pieces using a ladle.

4. Add coconut milk and mix well.

5. Turn off the flame when the curry starts boiling.

6. Heat oil and fry ingredients no: 5, and add to the curry.
