Ridge Gourd – Dried Prawns Stir Fry - Peechinga – Unakka Chemmeen Ularth

Ingredients for Peechinga – Unakka Chemmeen Ularth (Ridge Gourd – Dried Prawns Stir Fry):

  1. Dried shrimp, heads and tails removed and cleaned – 1/2 kg
  2. Coconut oil – 2 tbsp
  3. Red onion (shallots) crushed – 1/2 cup
    Garlic crushed – 2 tbsp
    Dried chilli crushed – 1.5 tbsp
    Turmeric powder – 1/2 tsp
    Curry leaves – One sprig
  4. Peechinga/ridge gourd sliced into 1-inch pieces – 1/2 kg
  5. Salt – As needed

How to prepare Peechinga – Unakka Chemmeen Ularth (Ridge Gourd – Dried Prawns Stir Fry)?

  1. Wash and then dry-roast the dried shrimp well and keep aside.
  2. Heat the coconut oil in a pan and sauté the items listed under section 3 until light brown.
  3. Add chopped ridge gourd, dried shrimp and salt, mix well and cook until dry.
