
Ingredients for Peechinga – Unakka Chemmeen Ularth (Ridge Gourd – Dried Prawns Stir Fry):
- Dried shrimp, heads and tails removed and cleaned – 1/2 kg
- Coconut oil – 2 tbsp
- Red onion (shallots) crushed – 1/2 cup
Garlic crushed – 2 tbsp
Dried chilli crushed – 1.5 tbsp
Turmeric powder – 1/2 tsp
Curry leaves – One sprig - Peechinga/ridge gourd sliced into 1-inch pieces – 1/2 kg
- Salt – As needed
How to prepare Peechinga – Unakka Chemmeen Ularth (Ridge Gourd – Dried Prawns Stir Fry)?
- Wash and then dry-roast the dried shrimp well and keep aside.
- Heat the coconut oil in a pan and sauté the items listed under section 3 until light brown.
- Add chopped ridge gourd, dried shrimp and salt, mix well and cook until dry.
