Ottada

Ottada is a traditional sweet dish of Kerala. Its preparation is slightly different from Kerala ada where they are steam cooked. In this case, earthen pots are used to cook the adas wrapped in banana leaves, and its taste is definitely different from normal Kerala adas.

Ingredients for Ottada:

1. Coconut grated – 150 gm

    Sugar – 4 big spoons

    Cardamom powdered – 1 small spoon

    Ghee – 2 small spoons

2. Water – 250 milli

    Salt – A pinch

3. Fried rice flour – 250 gm

4. Torn banana leaves – As required

How to prepare Ottada?

1. Mix together ingredients no: 1 to prepare the filling.

2. Boil water adding salt and add rice flour.

3. Stir it well and put off the flame.

4. Before the flour completely cools off, mix it well to prepare soft dough.

5. Place a little dough in a banana leaf and gently press using finger to spread it.

6. Place coconut-sugar filling on its top and fold it.

7. Heat an earthen pot in the stove and put 1 or 2 adas inside it.

8. Flip both sides till adas are well cooked.
