Koonthal Nirachath recipe

Ingredients for Koonthal Nirachath (Stuffed Squids):

  1. Large Squid – 10 
  2. Chilli Powder – 1/2 Small Spoon
    Turmeric Powder – A Pinch
    Pepper Powder – 1/2 Small Spoon
    Garam Masala Powder – 1/2 Small Spoon
    Salt – To Taste 
  3. Oil – As Required 
  4. Onion – 2 Large
    Green Chilli – 6-7, Chopped
    Ginger Paste – 1/2 Small Spoon
    Garlic – 10 Cloves, Chopped 
  5. Curry Leaves – 1 Sprig
    Coriander Leaves – A Handful, Finely Chopped
    Salt – To Taste 
  6. Grated Coconut – 1 Cup 
  7. Salt, Chilli Powder, Turmeric Powder – As Required 

How to prepare Koonthal Nirachath (Stuffed Squids)?

  1. Clean squids and keep them whole. Cut off heads and fins.
  2. Chop the cut head and fins into small pieces, add the second set of ingredients, and cook without adding water. 
  3. Heat oil in a pan, add the fourth set of ingredients one by one, and sauté. Add curry leaves, coriander leaves, and salt, and sauté. 
  4. When the raw smell fades, add the cooked mixture, stir well, and add grated coconut. Mix thoroughly and set aside. This is the filling. 
  5. Fill the whole squid with the prepared filling and secure the top with a toothpick. 
  6. Steam the filled squid using a steamer for 5 minutes. 
  7. Apply the seventh set of ingredients to the steamed squid and fry in hot oil. Serve hot.
