Mixed Grill – Mutton with Chicken

Ingredients for Mixed Grill – Mutton with Chicken:

For Chicken:

  1. Chicken (as a whole) – 1 kg
  2. Salt, lemon juice – as needed
  3. Onion – 2
    Celery, butter – a little

For Mutton:

  1. Mutton (single piece) – 1 kg
  2. Worcestershire Sauce, Tomato sauce and Soya sauce – 2 big spoons each
    Ginger-garlic paste – 6 big spoons
    Salt and pepper powder – as needed
  3. Vinegar – 4 big spoons
    Tomato sauce – 4 small spoons
    Mustard powder – 1 small spoon
    Salad oil – 16 small spoons
    Sugar – 2 small spoons
    Pepper powder – 2 small spoons
    Salt – one small spoon
  4. Liver and kidney – ½ kg
  5. Oil – as needed
  6. Onion – 6 big
  7.  Salt – as needed
    Pepper powder – ½ tsp
    Vinegar – 1 small spoon
  8. Sausage – 8
  9. Salami – ½ kg
  10.  Tomato – 4
  11. Vanaspathi – 2 small spoons
  12.  Pineapple – 1
  13. Egg – 8

How to prepare Mixed Grill – Mutton with Chicken?

  1. Marinate chicken with sufficient salt and lemon juice.
  2. Tie the chicken’s legs together. In an oven-proof plate, spread celery and onion.
  3. Apply butter to the chicken and cook well in a pre-heated oven.
  4. When one side is cooked well, flip it once and cook the other side too. When it’s done, cut it into pieces.
  5. Marinate the mutton piece using ingredients 5 and keep it aside for half an hour.
  6. Roast it and then cook it well, adding sufficient water.
  7. Fry the cooked mutton once more. (Never take its gravy for frying)
  8. From the remaining gravy, take 5 big spoons and mix it well with the ingredients listed under 6.
  9. Marinate the liver and kidney, taking 4-5 spoons of this gravy and keep it aside.
  10. After a few minutes, heat the oil and add the marinated liver and kidney and cook well.
  11. When the liver is almost cooked, add a little water and cook till water is absorbed completely.
  12. Slice the onion into circular pieces and sauté well in heated oil.
  13. Add pepper powder, salt and vinegar. Stir it well and take it from the flame.
  14. Cook the sausage for 5 minutes, and fry it along with the salami.
  15. Cut tomatoes in half and fry in hot oil.
  16. Marinate chicken and mutton pieces using the remaining gravy and keep them separately.
  17. Heat vanaspathi, add sliced pineapple pieces (cut into round pieces) and cook them.

For serving:

  1. On the serving plate, place pineapple pieces in the centre. They should be arranged like rings. On either side, place chicken and mutton pieces.
  2. Decorate it using tomatoes and onions. Round pieces give them a nice look.
  3. Make a bull’s eye from eggs and place them here and there to serve.
