Kovakka Thengakothu (Ivy Gourd with Coconut)

Ingredients for Kovakka Thengakothu (Ivy Gourd with Coconut):

1. Kovakka (Ivy gourd) – 200 gm

2. Salt – For taste

    Chilli powder – 2 small spoons

    Turmeric powder – 1 small spoon

3. Oil – 50 milli

4. Mustard – ½ small spoon

5. Red chillies – 3

    Curry leaves – 3 stems

    Shallots crushed – ½ cup

    Ginger crushed – 2 big spoons

    Garlic crushed – 2 big spoons

    Coconut pieces sliced thin – 2 big spoons

How to prepare Kovakka Thengakothu (Ivy Gourd with Coconut)?

1. Clean ivy gourd, and chop into thin round pieces.

2. Marinate it with ingredients no: 2 and allow to rest for a while.

3. Heat oil in a pan and sputter mustard seeds.

4. Sauté ingredients no: 5.

5. When onions turn light brown, squeeze ivy guard to remove excess water content& add to it.

6. Cook it in low flame till water content is fully absorbed.

7. Check salt. Serve hot with rice.
