Ingredients for Kirikiri Appam:
1. Mussels (medium-sized) – 25
2. Fennel powder – 1 small spoon
3. Pathiri podi (Rice flour) – 1 cup
4. Oil – For deep fry
How to prepare Kirikiri Appam?
1. Rub and clean sea mussels and cook them without adding water. (Mussels already contain water)
2. Shake the pot occasionally.
3. When the shells open, they are well-cooked.
4. Put off the flame, strain the water, and keep aside.
5. Remove the shell and clean the mussels.
6. Take 10-15 of them and make a fine paste using a mixer.
7. Add extra water to the water used to cook mussels (which we have strained and kept aside) and make it 1.5 cups.
8. Add fennel powder and also extra salt if needed.
9. Boil this water and add rice flour.
10. Using the tip of the spatula, mix the flour and turn off the flame.
11. Add mussels paste to it and knead the dough.
12. Now make rice or Unnakai-like thin structures from this dough with a 1-inch length. Both ends should be sharp.
13. Heat oil and deep fry them in hot oil.
14. When it cools, store in air-tight containers. You can preserve them for a few days.
Note: As mussels are already salted, take extra care while adding salt.
