Green Mango and Curd forms an amazing combo for a vegetarian meal served on banana leaf. It’s an integral part of the Thiruvananthapuram-style Kerala sadya and is made in different ways. Pacha Maanga Pachadi recipe

Ingredients for Green Mango Pachadi (Pacha Maanga Pachadi):

  1. Coconut oil – 1 big spoon
  2. Mustard – ½ small spoo
    Red chillies – 2, chopped fine
    Curry leaves – As required
  3. Shallots – 3, chopped fine
    Green chillies – 2, chopped fine
    Crushed ginger – 1 small spoon
  4. Green Mango – 1, cut into small pieces
  5. Water – ¼ cup
    Coconut milk – ½ cup
    Salt – For taste
  6. Coconut milk – ½ cup

How to prepare Green Mango Pachadi (Pacha Maanga Pachadi)?

  1. Heat oil in a pan and sauté ingredients no: 2.
  2. Add ingredients no: 3 and sauté the contents.
  3. When it’s done, add green mangoes and sauté for 5 more minutes.
  4.  Add ingredients no: 5 and cook for 5 minutes.
  5. Add the remaining coconut milk and take it off the flame.

Ingredients for Pacha Maanga Pachadi – Recipe 2:

  1. Raw mango (non-sour) – 1 cup, finely chopped and mixed with salt
    Onion – ¾ cup, finely chopped
    Green chilies – 1 tbsp, sliced into rounds
    Ginger – ½ tbsp, finely chopped
  2. Thick coconut milk – 1½ cups
  3. Coconut oil – 2 tbsp
  4. Mustard seeds – ½ tsp
  5. Curry leaves – 2 sprigs
    Dried red chilies – 3, broken into small pieces

How to prepare Green Mango Pachadi – Recipe 2?

  1. Add ingredients no: 1 to a bowl and mix well by squeezing lightly with your hand.
  2. Add thick coconut milk and mix well.
  3. Heat the coconut oil and splutter the mustard seeds.
  4. Add curry leaves and dried red chilies and sauté well.
  5. Pour this seasoning into the pachadi, mix, and serve.
