
Ingredients for Egg Yolk Curry:
- Oil – 3 teaspoons
- Mustard seeds – 1/4 teaspoon
- Shallots, chopped – 1 tablespoon
- Coriander powder – 1 teaspoon
- Curry powder – As required
- Water – 1 cup
- Salt – As required
- Eggs – 3
- Curry leaves – 1 sprig
- Thick coconut milk – 1 cup
How to prepare Egg Yolk Curry?
- Heat oil in a pan and splutter mustard seeds.
- Add shallots and sauté well. Once softened, add coriander powder and sauté until the raw smell disappears.
- Add curry powder and mix well.
- Pour water, stir, and let it boil. Add salt as required.
- Gently break eggs and pour them in different spots without stirring.
- Once the eggs are set, carefully flip them.
- Add curry leaves, mix gently, and allow the curry to thicken.
- Pour thick coconut milk, heat well, and remove from the flame.
- Serve hot with rice, chapati, dosa, or boiled tapioca.
