Easter Lamb Chops

Ingredients for Easter Lamb Chops:

1. Tender chicken chops (flesh near to ribs) – 4

2. Vinegar – 4 cups

    Garlic chopped fine – ½ small spoon

    Olive oil – 1 small spoon

For brown sauce:

3. Oil – As required

    Onions chopped fine – ¼ cup

    Garlic chopped fine – 1 small spoon

    Carrot chopped fine – ¼ cup

    Leeks chopped fine – ¼ cup

    Celery chopped fine – ¼ cup

    Maida – 50 gm

5. Mutton bone – 1

6. Butter – 2 big spoons

7. Leaks chopped fine – 1 small spoon

    Celery chopped fine – 1 small spoon

8. Red wine – ¼ cup (optional)

How to prepare Easter Lamb Chops?

1. Marinate mutton chops using ingredients no: 2.

2. Heat a tawa and fry marinated mutton chops till both sides are well fried.

3. Heat a thick bottomed pan and sauté onions, garlic, leaks, carrot and celery till they turn brown.

4. Add maida to it and fry the contents.

5. Add mutton bone and 1 litre water and boil the contents.

6. Reduce the flame and cook till water content reduces to 1/4th.

7. When it is done, remove the bone and strain the contents to get the stock.

8. Heat a pan and melt butter.

9. Add leeks and celery and sauté both.

10. Add red wine and mutton stock and keep boiling till contents reduce to half.

11. Add the grilled mutton chops to it and cook the contents.

12. When it is done, put off the flame.

13. You can decorate Easter Lamb Chops with cooked vegetables of your choice and boiled potato.

14. Serve with any sauce of your choice.
