Ingredients for Pizhinj Payasam:
1. Unakkalari (Raw rice without removing the rice bran /Nurukk) – 200 gm
2. Jaggery – 500 gm
3. Coconut – 5
4. Kadali banana – 2 nos:
5. Ghee – 100 gm
6. Dried ginger powder – 25 gm
7. Cardamom powder – 25 gm
8. Cumin powder – 25 gm
How to prepare Pizhinj Payasam?
1. Extract 1.5 cups of 1st milk from the coconut and 2.5 cups of the second milk.
2. Heat an urli and pour sufficient water.
3. Cook rice in this water.
4. When it’s almost done, add melted jaggery and mix well.
5. Allow the contents to boil and add the second extract of coconut milk.
6. Continue cooking till the payasam thickens.
7. Add the powders and ghee, and mix well.
8. Turn off the flame.
9. Add 1st extract of coconut milk.
10. Blend the banana in a mixer and add to the payasam.
11. Allow the payasam to cool and serve.
