Coco-Carrot Delight recipe

Ingredients for Coco-Carrot Delight:

1. Butter – 1.5 big spoons

2. Grated carrot – 1 cup

3. Sugar – 1.5 big spoons

4. White chocolate – ½ cup, upto brim (85gms)

5. Grated coconut desiccated (by placing in oven to remove moisture) – ¾ cup + 2 big spoons

6. Cardamom powder – 1/2 small spoon

How to prepare Coco-Carrot Delight?

1. Heat butter in a pan and sauté the carrots for 1 minute.

2. Add sugar and keep sauting till contents turn almost dry.

3. Turn off the flame and add white chocolate.

4. Keep mixing till the chocolate melts completely.

5. Add cardamom powder and ¾ cup of coconut to the above mixture.

6. Once it cools, place it in the refrigerator. The contents should turn thick & chilled.

7. Take them out and make small balls.

8. Wrap them in the remaining 2 big spoons of desiccated coconut.
