Chicken Kabab – Recipe 1
Ingredients for Chicken Kabab:
- Chicken (medium-sized, 1.5 kg) – 1
- Bread pieces – 4
- Milk – ½ cup
- Ginger – 1 piece
- Coriander leaves – 1 bundle
- Green chillies – 3
- Eggs – 2
- Garam masala powder – 2 small spoons
- Puthina leaves – a little
- Salt – as required
- Ghee – as required
How to prepare Chicken Kabab?
- Clean the chicken and add salt to it. Cook it as a whole. Then remove bones from the cooked flesh.
- Dip bread pieces in milk and squeeze them.
- Make a fine paste of ginger, green chillies and puthina leaves. Then mix this paste with chicken flesh and bread pieces and make a fine paste again.
- Add eggs and garam masala powder to this paste and mix well.
- Take a little and pierce it into a kabab skewer. Apply a little ghee to the skewer before the process.
- Fix a few kababs like this and grill them in the oven or any other method.
- Add a little ghee once in a while.
- When it’s well-cooked and its colour changes to grey, place it on a serving plate.
- Decorate using onion rings and lemon pieces. Serve with putina chutney.
Chicken Kabab – Recipe 2
Here I present yet another Chicken Kabab recipe published in Vanitha in 2010.
Ingredients for Chicken Kabab:
- Chicken minced – 1 cup
- Green papaya grated – 1 big spoon
- Gram flour roasted – 1.5 big spoons (While roasting the flour should not change its colour)
- Chilli powder – 1.5 small spoons
- Garam masala powder – ½ small spoon
- Turmeric powder – ¼ small spoon
- Ginger paste – ½ small spoon
- Garlic paste – ½ small spoon
- Salt – For taste
- Oil – For frying
How to prepare Chicken Kabab?
- Mix together ingredients 1 to 9 and roll into finger-shaped kababs.
- Fry in hot oil. All sides should turn brown.
- Pierce each kabab with a sliced carrot on either side using a toothpick, and serve aside tomato sauce.
Note: As green papaya is added to the mix, the chicken easily cooks.
