Yam Chutney (Chena Chammanthi)

Ingredients for Yam Chutney (Chena Chammanthi):

1. Yam cut into thin square slices – 50 gm

2. Red chillies – 3

3. Garlic – 3 cloves

4. Coconut scrapped fine – 1 cup

    Ginger chopped – 1 tsp

5. Tamarind – Gooseberry sized

6. Asafoetida – A pinch

7. Salt – For taste

8. Coconut oil – 2 table spoons

For tempering:

9. Coconut oil – 1 table spoon

    Mustard – ½ tsp

    Black gram dal – 1 tsp

    Red chillies split into two – 2

    Curry leaves – 2 stems  

How to prepare Yam Chutney (Chena Chammanthi)?

1. Fry yam pieces in hot oil. Don’t overcook them.

2. Fry garlic in this oil, followed by red chillies.

3. Fry coconut and ginger in the same oil. Never over-fry them.

4. Make a fine paste of all above ingredients, adding tamarind, asafoetida and salt.

5. Heat oil, temper ingredients no: 9 and add to your yam chutney.
