Pachakkari Paal Koottu recipe

 

Ingredients for Pachakkari Paal Koottu:

  1. Different vegetables (Carrot, beans, green peas, cauli flower etc) – 150 pieces
  2. Coconut oil – 10 milli
  3. Mustard – 1 pinch
  4. Cinnamon – 1
  5. Cardamom – 3
  6. Green chilli – 1
  7. Curry leaves – as needed
  8. Tender coconut water (karikkin vellam) – 50 milli
  9. Ghee – 5 milli
  10. Coconut milk (thick) – 50 millilitres
  11. Black pepper – 1
  12. Coriander leaves – 1 stem
  13. Salt – as needed

How to prepare Pachakkari Paal Koottu?

  1. Heat oil and splutter mustard seeds.
  2. Sauté green chilli, coriander leaves and curry leaves.
  3. Add vegetables and salt.
  4. Boil the ingredients, adding coconut water.
  5. Add ghee and heat till vegetables become soft.
  6. Add the first coconut milk and heat till the curry thickens.
  7. Add black pepper, salt and coriander leaves.
