Chettinad Vegetarian Curry

Ingredients for balls:

  1. Gram flour (kadala maav) – ½ kg
  2. Maida – 100 gm
  3. Dalda – 50 gm
  4. Ghee – 50 gm
  5. Salt – as required
  6. Water – as needed

Ingredients for gravy:

  1. Refined oil – 100 milli
  2. Mustard seeds – 10 gm
  3. Curry leaves – 2 stem
  4. Onion chopped – 100 gm
  5. Ginger-garlic paste – 20 gm
  6. Green chillies chopped – 20 gm
  7. Kashmiri chilli powder – 10 gm
  8. Turmeric powder – 10 gm
  9. Coriander powder – 10 gm
  10. Garam masala powder – 10 gm
  11. Kus kus paste – 50 gm
  12. Coconut paste – 50 gm
  13. Salt – as needed
  14. Coriander leaves – 100 gm

How to prepare Chettinad Vegetarian Curry?

  1. Mix all ingredients listed for balls, make balls and keep it aside for 1 hour.
  2. Then spread it to flat sheets of ½ inch thickness and cut designs out of them of your desire. Diagonal shape, fish shape or anything of your preference can be selected.
  3. Put them in boiling water and put the flame off. Let them cook for 10 minutes. After that, take them outside and allow them to cool.
  4. Heat oil and splutter mustard seeds and add curry leaves.
  5. Sauté onions. Later add ginger, garlic and green chillies and sauté again.
  6. Add all curry powders and sauté again.
  7. Add kus kus paste and coconut paste and add sufficient water. Heat for10 minutes.
  8. Add balls to it and cook for 5 minutes.
  9. Add coriander leaves and put the flame off.
