Pesto Flavoured Minestron Soup recipe

 

Ingredients for Pesto Flavoured Minestrone Soup:

1. Vegetables (Onions, Leeks, Celery, Carrot, Cabbage, Turnip, Garlic) – 300gm
2. Olive Oil – 60 milli
3. Stock – 3 ltr
4. Green peas – 25 gm
    French beans – 25 gm
5. Salt – As needed
    Pepper – As needed
6. Pasta – 50 gm
    Potato chopped – 50 gm
7. Tomato juice – 60 milli
    Tomato chopped (after removing skin) – 100 gm
8. Cheese – As needed

How to prepare Pesto Flavoured Minestrone Soup?

  1.  Cut vegetables into pieces, and sauté them in olive oil.
  2. Boil stock and add to vegetables. Add salt and pepper powder.
  3. Add French beans and green peas and cook for 15 minutes on a low flame.
  4. Add pasta and potato.
  5.  After a few minutes, add chopped tomato and tomato juice and cook on a low flame.
  6. When it is done, add cheese and serve hot.
