Ingredients for Paavakka Kalva (Bitter gourd Kalva):

1. Bitter gourd – ½ kg

2. Salt – For taste

    Turmeric powder – 1 small spoon

3. Oil – As required

4. Cumin seeds – ½ small spoon

5. Onions chopped fine – 100 gm

    Green chillies chopped fine – 1 big spoon

    Ginger chopped fine – 1 big spoon

    Cashews broken – 4 small spoons

    Raisins – 4 small spoons

6. Chilli powder – 2 small spoons

    Coriander powder – 2 small spoons

    Turmeric powder – 2 small spoons

    Gram flour – 3 big spoons

7. Jaggery powdered – 3 big spoons

    Tamarind juice – 3 big spoons

8. Garam masala powder – ½ small spoon

    Coriander leaves – To decorate

How to prepare Paavakka Kalva (Bitter gourd Kalva)?

1. Split bitter gourd lengthwise and remove seeds.

2. Finely chop them into thin pieces and marinate using salt and turmeric powder.

3. Allow to rest it for a while.

4. Transfer the contents to a strainer and show beneath running water of tap.

5. Wash bitter gourd and squeeze water content fully.

6. Deep fry bitter gourd pieces in hot oil and remove excess oil.

7. Heat a little oil and sauté cumin seeds.

8. Add ingredients no: 5 and sauté well.

9. Add tamarind juice and jaggery and keep stirring to avoid lumps.

10. Add fried bitter gourd to this curry.

11. Sprinkle ingredients no: 8 on its top and serve hot.
