Oats Idli & Healthy Sambar

Ingredients for Oats Idli:

1. Black gram – 50 gm

    Raw rice – 100 gm

2. Oats – 100 gm

    Water -As needed

3. Salt – For taste

Ingredients for Healthy Sambar:

4. Pumpkin – 100 gm, chopped

    Ash gourd, okra, tomato, broccoli, onion – 50 gms each, chopped

    Long beans, Chow chow, Ivy gourd, cucumber – 30 gms each, chopped

    Salt – To taste

    Turmeric powder – A pinch

    Ginger chopped – 1 small spoon

    Green chillies chopped – 1 small spoon

    Garlic chopped – 2 cloves

5. Water – As required

6. Oil – 1 small spoon

7. Mustard, fenugreek – ½ spoon each

    Shallots – 20 gm, chopped

    Curry leaves – 1 stem

8. Turmeric powder – A little

    Sambar powder – 1 big spoon

    Asafoetida powder – 2 pinch

9. Tamarind – Gooseberry sized, squeezed in water.

How to prepare Oats Idli?

1. Soak rice and black gram, and make a fine paste.

2. Add oats and sufficient water to it, and prepare the batter.

3. Allow it to rest for 8 hours or more to ferment.

4. Add salt to batter, and steam cook the idlis.

How to prepare Healthy Sambar?

1. Cook ingredients no: 4 adding water.

2. Heat oil in a pan and add mustard and fenugreek seeds.

3. Add sliced shallots and curry leaves too, and fry the ingredients.

4. Add ingredients no: 8 to the oil and add tamarind juice too.

5. When it boils, add the cooked vegetables.

6. Boil your sambar, and if needed, add extra salt.
