Ingredients for Fried Masala Chicken Curry in Chettinad Style:

1. Red chillies – 15 gm

   Coriander seeds – 2 small spoons

   Coconut scrapped – 100 gm

   Cumin seeds – 2 small spoons

   Shallots – 25 gm

2. Coconut oil – 1 big spoon

3. Cinnamon, cloves and cardamom – 2 small spoons combined

   Fennel seeds – 2 small spoons

4. Onions – 100 gm, chopped fine

   Curry leaves – 5 stems

5. Ginger-garlic paste – 4 small spoons

    Tomato puree – 5 big spoons

6. Boneless chicken cut into small pieces – ½ kg

    Salt – To taste

7. Coriander leaves – To decorate

How to prepare Fried Masala Chicken Curry in Chettinad Style?

1. Dry fry ingredients no: 1 without adding oil, and make a fine paste adding sufficient water.

2. Heat oil and sauté ingredients no: 3.

3. Add onions and curry leaves and sauté again.

4. When onions turn golden brown, add ingredients no: 5 and ground masala paste and sauté again.

5. Add boneless chicken pieces and salt, mix well and cook till it’s done.

6. Add coriander leaves to decorate in the final stage before you serve hot.
