Bajj Ambade

Bajj Ambade is a traditional Udupi dish, usually served as a 4 o’clock snack.

Ingredients for Bajj Ambade:

1. Urud dal (black gram dal) – 2 cups

    Bengal gram dal – ½ cup

2. Water – 1.5 cups

3. Salt – As needed

4. Oil – For deep frying

For Baje:

5. Coconut scrapped – 1 cup

    Mustard – 2 small spoons

    Tamarind – Gooseberry sized

    Red chillies – 10

    Jaggery – Lemon sized

    Salt – For taste

6. Asatafeodia – A pinch

   Curry leaves – A handful

   Green chillies – 2, chopped fine

How to prepare Bajj Ambade?

1. Soak both dals in water for 1 hour.

2. Drain water and make a fine paste.

3. Add salt, and grind once more.

4. Make gooseberry sized balls from this batter and deep fry in hot oil.

5. The balls should be fried till golden brown. They are called Ambade.

6. Make a fine paste of ingredients no: 5.

7. The paste should be thinner than dosa batter.

8. Add ingredients no: 6 to it and boil it well.

9. Take off the flame and add ambade balls.

10. Serve Bajj Ambade after half an hour.
