Mexican Rice

Ingredients for Mexican Rice:

1. Chicken breast with skin cut into small square pieces – 1.5 cups

2. Garlic powder – ½ small spoon

    Chilli powder – 1-1.5 big spoons

    Cumin powder – 1 small spoon

    Oregano – 1 small spoon

    Pepper powder – ½ small spoon

3. Olive oil/oil – 2 big spoons

4. Onions – 1, chopped

5. Garlic chopped – 1 big spoon

6. Basmati rice – 1 cup

    Red capsicum – ½, chopped into fine pieces

    Salsa – 1 cup

7. Chicken stock – 2 cups

8. Parsley chopped – To decorate

How to prepare Mexican Rice?

1. Pre-heat oven in 180 degree celsious.

2. Mix together ingredients no: 2 and use this paste to marinate chicken.

3. Heat olive oil in a pan and put the chicken pieces in such a way that skin portion should come in the beneath portion.

4. After 5 minutes, flip the chicken pieces and fry for 5 more minutes.

5. When both sides turn brown colour, transfer chicken pieces to a plate.

6. Add a little more oil and sauté onion pieces.

7. When onions are well sauted, add garlic and sauté again.

8. Add ingredients no: 6 and fry for a few minutes.

9. When contents boil, add fried chicken, salt and chicken stock and mix well.

10. Wrap the contents using a foil and bake for 40 minutes.

11. Your Mexican rice is ready.

How to prepare Salsa?

Take ingredients – 6 tomatoes chopped fine, tomato paste 200 gm, garlic 1 clove crushed, ½ onion chopped fine, ½ cup chopped coriander leaves, 2 or 3 chopped green chillies, 1 big spoon lemon juice and salt. Blend well these ingredients twice or thrice in a mixer. But it should not be over-grinded. You can keep it in refrigerator for more than a week.
