
Ingredients for Mango Jelly with Fruit Salad:
- Mango fruit ground smooth – 2 cups
Sugar – 2-3 big spoons - Gelatine – 3 small spoons
Water – 3 big spoons - Mango chopped fine – 1 cup
For Fruit Salad:
- Lemon juice/Orange juice – 2 big spoons
Sugar – 3 big spoons - Robusta – 1, chopped fine
Apple – 1, chopped fine
Mango – 1, Chopped fine
Orange – 1, separated
Seedless grapes – 1 cup - Pineapple chopped fine – 2 cups
Sugar – ¼ cup
Water – ½ cu
Cloves – 3
For Coconut Milk Custard:
- Thick coconut milk – 1.5 cups
Condensed milk – ½ tin - Cornflour – 2 or 3 big spoons
- Vanilla essence – A drop
How to prepare Mango Jelly with Fruit Salad?
- To prepare jelly, grind and strain the mango, and transfer it to a bowl.
- Add sugar and mix well.
- Using the double boiling method, place this bowl in boiling water to heat it.
- Soak gelatine in cold water and melt it using the double-boiling method (as above).
- Add gelatine to the mango paste and mix well.
- Take off from boiling water, and allow the mixture to cool.
- Refrigerate this jelly.
- When the jelly is half set, add mango pieces and mix slowly.
- Sprinkle a little water in a ring mould and pour this mixture into it.
- Refrigerate it and allow it to set.
- To prepare fruit salad, melt orange/lemon juice in sugar and mix it with ingredients no: 5.
- Cook ingredients no: 6 and when it cools, add to the above fruit mixture.
- Remove the cloves, mix the fruit salad and refrigerate.
- To prepare coconut milk custard, mix together coconut milk and condensed milk.
- Slightly heat it and keep stirring.
- When the milk mixture heats, mix corn flour with a little milk and add it.
- Keep stirring until the contents thicken and turn off the flame.
- When it cools, add a drop of vanilla essence, mix well and refrigerate.
- Just before you serve, place the ring mould upside down into the serving plate to transfer the jelly.
- In the centre pit, fill fruit salad.
- Decorate jelly’s outer edge with fruits and serve with coconut milk custard.
