Maanga Curry (Mango Curry)

Through this column, I shall give you two different preparations of Mango curry published in Vanitha in 2010 and 2017.

 Ingredients for Maanga Curry (Mango Curry):

1. Green Mango – 2 (250 gm)

2. Chilli powder – 2 small spoons

    Coriander powder – 4 small spoons

    Turmeric powder – 1 small spoon

    Fennel seeds – 1 small spoon

3. Shallots chopped – ½ cup

    Ginger – ½ inch piece chopped length-wise

    Green chillies – 4 nos: split into 4

    Curry leaves – 1 stalk

    Coconut oil – 1 big spoon

4. Coconut milk extracted from 3 cups of scrapped coconut – 2 cup (First extract)

    Coconut milk second extract – 2 cup

5. Coconut oil – 2 big spoons

6. Mustard – 1 small spoon

    Red chillies – 3, cut into two pieces

    Curry leaves – 1 stalk

How to prepare Maanga Curry (Mango Curry)?

1. Peel off the skin of mango, and cut into thin 1-inch pieces.

2. Mix ingredients no: 2 and grind it to a fine paste.

3. Add ingredients no: 3 to this paste, and mix well using hand.

4. Transfer the contents to a cooking pan.

5. Add second coconut milk and half of first milk to it, along with cut mango pieces and mix well.

6. Put the cooking pot/pan in flame and stir continuously still the contents boils.

7. After that reduce the flame, close it with a lid, and cook.

8. When mango pieces cook well, add the remaining first coconut milk to it.

9. Put the flame off once the curry boils.

10. Heat oil and sauté ingredients no: 6.

11. Add the oil to your mango curry, and serve the curry once the contents cool off.

Maanga Curry (Mango Curry) – Method 2


Ingredients for Maanga Curry (Mango Curry):

1. Green mango – 1

2. Shallots – 10, chopped

3. Salt – As required

4. Chilli powder – 2.5 small spoons

    Coriander powder – 1 small spoon

    Turmeric powder – 1/2 small spoon

5. Coconut scrapped – 1 cup (extract milk)

6. Garam masala powder – 3/4 small spoon

7. Oil – As needed

8. Mustard – 1 small spoon

9. Curry leaves – 1 stalk

How to prepare Maanga Curry (Mango Curry)?

1. Cut mango to fine pieces (similar to mango pickle).

2. Mix mango with shallots and salt and keep aside.

3. Heat a pan and fry the powders (ingredients no: 4).

4. When it turns to a pleasant aroma, add chopped mango pieces and cook for two minutes.

5. Add coconut milk to it and boil.

6. Stir continuously so that the coconut milk won’t split.

7. If needed, add extra salt.

8. Add garam masala powder and take the curry from flame.

9. Heat oil, sputter mustard seeds and curry leaves, and add to curry.
